Chicken and dumplings

Another day, another blizzard. Here's what I do when I'm stuck home on a snow day.

INGREDIENTS (4 people):
- 1 whole chicken, cut in pieces
- 8 cups chicken broth
- 3 parsnips
- 3 carrots
- 1 bunch parsley (I used celery because I had no celery at home and was not about to brave the elements for just a couple of ribs!)
- 1 medium onion
- salt, pepper
- 1/4 cup flour, to dredge the chicken pieces
- 1/2 cup light cream
- 1 tbsp apple butter (or 1 stick cinnamon and a pinch of cloves)
- 2 tbsp butter, not pictured

for the dumplings:
- 1 cup light cream
- 3/4 cups AP flour
- 1/2 cup corn meal
- 1 1/2 tsp baking powder
- 1 tsp salt

RECIPE:
start with the chicken stew
- season the chicken pieces with salt and pepper, place in a bag with the flour and shake until completely dredged in flour and shake of the excess

- melt the butter in a dutch oven and saute the chicken pieces over medium-high heat until golden and crispy (about 2 minutes per side) and reserve on the side

Note: the chicken is still raw inside! that is normal, it will simmer for about 30 minutes later.
- dice the carrots, parsnips and onions in 1/4" cubes and saute them in the pot with the chicken drippings over medium heat until soft (abut 3-4 minutes)

- tie the parsley stems with a bit of twine (it'll be easier to remove it later) and add to the softened veggies, then add the apple butter, broth, chicken pieces, cover and simmer over medium-low heat for about 30 minutes or until the chicken is cooked through

- when the chicken is cooked through, remove from the pot and shred with forks

- return the shredded chicken meat to the pot, add the cream and keep warm on very low heat

Note: you do not want to bring it back to a boil or simmer once the cream is in, otherwise it will separate

prepare the dumplings
- mix the dry ingredients of the dumplings, add the cream and stir until just combined

Note: the dumpling dough will be chunky and on the dry side (you don't want it runny)
- with a couple of forks, form the dumplings and drop in the simmering stew

- cover and cook until the dumplings are fluffy and float to the surface (about 5 minutes)

- sprinkle chopped parsley leaves and serve hot
- enjoy!

Leftover Thanksgiving turkey and corn chowder

It's that time of year again.

Thanksgiving has come and gone. You've already had reheated turkey twice, and you just cannot even think of having it a third and last time… Look no further, this is an awesome new way to use your Thanksgiving leftovers.

Here's how I made this delicious chowder out of my leftovers :)

INGREDIENTS (2-3 people):

- leftover turkey meat, shredded or diced
- 1/2 to 1 cup leftover gravy, but feel free to use more or less according to what you have left!
- 4 to 8 cups chicken, vegetable or turkey broth, depending on how thick you want the chowder to be (I used chicken bouillon, since that is what I had on hand)
- 1 large carrot, 1 medium onion and a few branches of celery, diced finely in a mirepoix
- kernels from 2 ears of fresh corn
- 1/4 cup AP flour
- 2 tbsp butter
- a sprig of thyme

RECIPE:
- in a deep skillet, stockpot or dutch oven, melt the butter and saute the carrot, onion and celery over medium heat until soft

- make a roux by adding the flour and cook it over low heat for a couple of minutes

- add the gravy and broth and stir over medium-low heat until thickened, then add the corn kernels and the shredded/sliced turkey meat and stir until well combined

- bring to a simmer over low heat for a few minutes, or until warmed through

- serve hot alongside a nice thick slice of grilled sourdough or buttered cornbread
- enjoy!

Parsnip, barley and mini-meatballs stew

The weather is getting crisp and it is soon time for hearty stews and soups.

Last week, I was inspired by a bag of parsnips in my fridge and a can of crushed tomatoes, staring at me from the back of my pantry. I knew I had ground meat in the freezer, so I made mini-meatballs (click here for a recipe) and whipped up an easy stew. Or soup? Stoup?

Here's how you can make it.

INGREDIENTS (4-6 people):
- a large handful of mini-meatballs (click here for a recipe)
- 2 tbsp butter
- 1 28oz can of crushed tomatoes
- 6 to 8 cups beef broth
- 1 cup of barley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 to 1 tsp smoked paprika, to taste
- 2 shallots, sliced finely
- 2 to 3 ribs of celery, diced
- 1 clove of garlic, grated
- 1 lb bag of parsnips, peeled and diced finely

RECIPE:
- in a large, deep stockpot, melt the butter and saute the meatballs over medium-high heat until golden but not fully cooked and reserve on the side

- in the flavored butter, saute the shallots, celery and garlic over medium heat until soft

- add the crushed tomatoes and beef broth and bring to a simmer, the add the diced parsnips and cook until soft (20-25 minutes)

- about 15 minutes in, add the barley to the simmering liquid and cook for another 10 minutes, or following your barley's cooking instructions

- a few minutes before you are ready to eat, add the precooked meatballs and heat up until completely cooked through

- enjoy!
