Steamed eggplant pasta salad

At last!! A new recipe!! My apologies to all of you for being such a slacker on the blog for the past month. September has been crazy busy. I've had visitors at home for weeks at a time, and had absolutely zero time to edit any posts.

But this is over now, and I have TONS of recipes in my head for you!

Here is the first recipe of the fall: my steamed eggplant and pasta salad.

INGREDIENTS (4 people):
- 2 cups of dry short pasta (I used orecchiette)
- 2 medium eggplants
- a large handful of cherry tomatoes
- 1/4 cup black olives, pitted
- basil leaves, to taste
- juice of 1 lemon
- 10-15 baby mozzarella balls, in oil
- a pinch of salt

RECIPE:
- rinse and dice the eggplants in bite-sized pieces and salt them lightly while you wait for a huge pot of water to boil
- when the water boils hard, start steaming the eggplants for 10-15 minutes, then pour the pasta in the boiling water underneath the basket and cook until the pasta is al dente and the eggplant is tender

Note: I used my new pasta cooker-steamer combo, but you can absolutely do this in different pots!
- when the pasta is al dente, strain and rinse quickly with cold water, sprinkle a little olive oil and toss around so the pasta does not stick together

- reserve the cooked eggplant on the side until just warm, then add to the cold pasta and toss all the remaining ingredients together, sprinkle with a little lemon juice and shredded basil leaves

- enjoy your super healthy eggplant-pasta salad!

Fattoush salad

Look no further! This is the perfect salad: fresh cucumber, ripe tomatoes, tons of fresh parsley and mint, crispy homemade flat bread croutons and a tangy lemony garlicky dressing… Yes, it is. Perfect.

Here's how you can make Fattoush.

INGREDIENTS (for 4 people):
for the salad
- 1 small head of romaine salad
- 1 cucumber
- 1 large handful of cherry tomatoes
- 1 sweet green pepper
- a bunch of flat leaf parsley
- a bunch of fresh mint
- 1 loaf of Khoubiz or any flat bread like a pita (click here for a recipe)
for the dressing
- juice of 1 lemon
- 1/2 cup extra virgin olive oil
- 1 big clove of garlic
- a pinch of salt (to taste)

RECIPE:
- this recipe is so simple! Just chop all the salad ingredients (except the bread) and arrange in a serving bowl

- break the flat bread into bite sized pieces and toast them until crispy and sprinkle over the salad

- prepare the dressing: combine all the ingredients in a bowl and using a stick blender, mix until emulsified, pour over the salad and toss

- Enjoy!

Ratatouille

Long before being the title to (let's admit it) one of the awesomest Disney/Pixar productions of all time, Ratatouille was a delicious French dish.

Made with sun-gorged vegetables like eggplants, zucchini, bell peppers and tomatoes, it is traditionally served in the South of France or Provence. Not unlike curry, chili or lasagna, there are as many recipes for it as there are cooks.

My favorite way to have it is with buttery, creamy scrambled eggs or cold on a piece of sourdough toast. Delicious!

Here's my recipe.

INGREDIENTS (for 4 people as a side dish):
- 1 large eggplant
- 1 zucchini
- 1 bell pepper (any color)
- 1 bucket of cherry tomatoes (or 3 medium tomatoes)
- 3 cloves of garlic
- 1 onion
- 1 bay leaf
- 1 sprig of thyme
- 1/4 cup of olive oil, reserve 1 tbsp on the side
- salt and pepper to taste

RECIPE:
- dice the eggplant (about 1/2 inch), salt lightly to draw water out and pat dry with paper towels

- dice the zucchini, pepper, onion and garlic and halve the cherry tomatoes (if using medium tomatoes, cut in eight)

- in a hot pan over medium heat, fry the dried eggplant in the olive oil until golden and reserve in a bowl

- in the remaining tbsp of olive oil, fry the onion and garlic over medium heat until translucent and fragrant, then add the zucchini and pepper and fry for 2-3 minutes over medium heat

- add the cooked eggplants, tomatoes, thyme and bay leaf, cover and let simmer over low heat for 30 minutes

- after 30 minutes, uncover and let simmer for another 15-20 minutes over low heat, stirring often

- serve warm alongside eggs, fish or any meat (goes really well with chicken and pork), room temperature or cold, as a salad or on toast. Ratatouille is delicious any way you eat it!
- enjoy!!

Fresh kale garganelli and lamb-shiitake bolognese

This is the best. Pasta. Ever!

Not only is it healthy with a bunch of fresh kale in the pasta dough (click here for the recipe) and lots of fresh meaty shiitake mushrooms in the sauce, the bolognese has this round, velvety taste from the lamb that will make you want to lick your plate!

Here's how you can make it!

INGREDIENTS (4 people):
- 1/2 to 1 quantity of fresh kale garganelli (click here for recipe)
- 1lb ground lamb
- 1 8oz bucket shiitake mushrooms, sliced
- 1 onion, diced finely
- 4 cloves of garlic, grated
- 1 28oz crushed tomatoes
- 1 sprig of rosemary
- 1/4 cup of white wine
- 2 tbsp olive oil
- salt and pepper to taste
- parmesan cheese and basil leaves for decoration

RECIPE:
- in a large pan, brown the lamb in the olive oil over high heat, add the onion and garlic when the meat is cooked almost all the way and cook another 2 minutes (or until the onions are translucent)

- add the wine, rosemary, tomatoes and shiitake and cook over medium heat for 45 minutes, adding water if the sauce gets too thick or sticks to the bottom

- ladle over freshly cooked kale garganelli (or really any other type of pasta you fancy!)

- sprinkle with a healthy dose of freshly grated parmesan cheese and decorate with a few basil leaves
- trust me when I say this is probably the best pasta I've had in a few years and abandon yourself into the wave of deliciousness coming your way ;)
